I may be down a few pounds...

Edward is back cooking up a North American favourite - Beans & Wieners .  Since he is doing all the cooking, he obviously is the Chef de cuisine.  This person is in charge of all activities related to the kitchen, which usually includes menu creation, management of kitchen staff, ordering and purchasing of inventory, and plating design. Chef de cuisine is the traditional French term from which the English word chef is derived.  Just in case you didn't know.....

Journey to Ofu

Pago Pago

You arrive around 9:45pm on a Monday or Friday night, as there are only two international flights a week scheduled for American Samoa.  To add to the challenge of getting there, both flights are from one location – Honolulu.

Polynesian Culture

Sa is a curfew of sorts that is typically observed daily for about 15 minutes, but is extended on occasion. During this time no one is to leave their homes for any reason or they risk a fine from the village.

Vaoto Lodge

Sometimes the real adventure is in just getting there.  This was certainly true of my trip to the tiny island of Ofu.  Once you have made it to American Samoa, you still have to navigate your way to Ofu.

Final Thoughts

What an adventure.  How could I have imagined I would be the only visitor on this incredibly beautiful island in the South Pacific.  I came in search of the most beautiful beaches, and found much more.  

Island Life - Hiking

After getting organized with my accommodations, I began to venture out to see what this island was all about.  There is a US National Park Office on the island - actually just next door to Vaoto Lodge.

Beaches & Sunsets

What words can describe this paradise.  Every day you hike to another beautiful beach.  Then you put your beach towel down and snorkel in the crystal clear blue waters. Not a sole insight.
